Egger explained why these violations are so dangerous: “Certain bacteria, like Staphylococcus (staph), are naturally found on human skin and can survive cooking temperatures.” Translation? Even if food is cooked thoroughly, contamination from poor handling can still make diners sick.

And then there’s the issue of preparing food on the floor. Floors are not considered food contact surfaces and aren’t sanitized regularly. This creates an ideal environment for bacteria to thrive.


Confronting the Owner

When Local 10 News investigator Jeff Weinsier attempted to confront China Yan’s owner about these practices, he was met with silence—and a slammed door. The refusal to address these issues only added fuel to the fire.
