Pancit Canton (Filipino Stir-Fried Noodles)

Pancit Canton is a beloved Filipino noodle dish that combines crispy egg noodles with a medley of meat, seafood, and fresh vegetables. This hearty and flavorful dish is perfect for family gatherings and celebrations, featuring a savory sauce that brings all the ingredients together harmoniously.


Ingredients
Noodles and Proteins:
- 16 oz Pancit Canton flour noodles
- 8 oz boneless skinless chicken thighs, cut into small pieces
- 8 oz large raw shrimp
- 4 oz pork meat, cut into small pieces
Sauce and Seasonings:
- 2 cups water
- 2 1/2 tsp chicken bouillon powder
- 2 1/2 Tbsp oyster sauce
- 2 1/2 Tbsp dark soy sauce
- 1/2 tsp cracked black pepper
- 2 tsp sesame oil
Vegetables and Aromatics:
- 8 oz cabbage, chopped
- 1 medium carrot, julienned
- 1 celery stick, sliced
- 1/2 small onion, diced
- 4 oz sugar snap peas
- 3 cloves garlic, minced
- 2 scallions, sliced

Step 1: Prepare the Broth
Create the broth by combining 2 cups of water with 2 1/2 teaspoons of chicken bouillon powder.

Step 2: Start Cooking
Heat several tablespoons of cooking oil in a preheated wok.

Step 3: Cook Aromatics and Proteins
Sauté onions until translucent.

Add garlic and sauté quickly.

Cook chicken thigh pieces until done and remove from wok.

Add more oil and cook pork pieces until done.

Step 4: Cook Vegetables
Add all fresh vegetables (except sugar snap peas) and sauté quickly to maintain texture.

Add shrimp and sauté briefly until just cooked.

Remove all meat and vegetables from the pan.

Step 5: Prepare Sauce
Add broth to the wok and scrape up the fond.

Add oyster sauce and dark soy sauce.

Add cracked black pepper and mix well.

Step 6: Cook Noodles and Combine
Add half of the Pancit Canton noodles to the wok.

Add sugar snap peas.

Stir and cook noodles until softened.

Add remaining noodles and return all cooked ingredients to the wok.

Step 7: Finish the Dish
Turn off heat and add sliced scallions.

Add sesame oil and mix well.

Serve with fresh lime wedges for squeezing over the dish.
