Homemade Chinese Egg Noodles From Scratch

These authentic Chinese-style egg noodles are made completely from scratch, resulting in chewy, bouncy noodles perfect for lo mein or other Asian dishes. With just a few basic ingredients, you can create restaurant-quality noodles that have the perfect texture and bite.

Ingredients

  • 1½ cups (190g) all-purpose flour
  • ¼ teaspoon salt
  • 1 large egg, room temperature
  • 2½ to 3 tablespoons (37.5-45ml) water
  • Additional flour for dusting

Step 1: Making the Initial Dough

Add 1½ cups all-purpose flour to a bowl

Transfer dough to work surface (no flour needed)

Cover dough with cling wrap

Remove dough after resting

Knead again for 5-10 minutes until smooth and springy
