Homemade Chinese Egg Noodles From Scratch
These authentic Chinese-style egg noodles are made completely from scratch, resulting in chewy, bouncy noodles perfect for lo mein or other Asian dishes. With just a few basic ingredients, you can create restaurant-quality noodles that have the perfect texture and bite.

Ingredients
- 1½ cups (190g) all-purpose flour
- ¼ teaspoon salt
- 1 large egg, room temperature
- 2½ to 3 tablespoons (37.5-45ml) water
- Additional flour for dusting
Preparation Time

Step 1: Making the Initial Dough
Add 1½ cups all-purpose flour to a bowl

Add ¼ teaspoon salt

Add one large room temperature egg

Mix ingredients together, starting with a fork

Switch to using hands to combine ingredients

Step 2: First Kneading
Transfer dough to work surface (no flour needed)

Knead dough until somewhat smooth

If dough feels too dry, add water by wetting hands while kneading

Continue kneading for about 7 minutes

Step 3: First Rest
Cover dough with cling wrap

Place in bowl and let rest for 30 minutes

Step 4: Second Kneading
Remove dough after resting

Knead again for 5-10 minutes until smooth and springy

Test dough by pressing – it should spring back

Step 5: Rolling the Dough
Flour work surface

Roll dough into a thin, long sheet

Step 6: Preparing for Cutting
Dust both sides of the rolled dough with flour

Fold the dough sheet carefully

Step 7: Cutting the Noodles
Cut off uneven ends

Cut into thin strips for lo mein

Gently separate noodles by bouncing and pulling them apart
