This dish is not only easy to make but also perfect for those cozy fall and winter evenings.

Ingredients

  • about 6 medium gold potatoes
  • 1 Tbs olive oil
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • salt and pepper to season potatoes to your taste
  • 3 large chicken breasts
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to season chicken to your taste
  • 3 Tbs unsalted butter
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 Tbs flour
  • 1/2 cup whole milk mixed with 1 cup heavy cream
  • 1/3 cup parmesan cheese
  • 2 chicken bouillon cubes
  • fresh parsley for garnish

Instructions Below (with Step-by-Step Photos)

We’ll start with medium-sized gold potatoes, cutting each into quarters. Once all the potatoes are quartered, they go straight into the slow cooker.

Cutting the potatoes into quarters

Drizzle olive oil over the potatoes and season them with dried thyme, dried rosemary, salt, and black pepper. Mix everything well and set it aside for later.

Next, it’s time to season the chicken breasts. Use salt, black pepper, dried oregano, paprika, garlic powder, and onion powder. Mix these together and season the chicken on both sides.

Now, we’ll sear the chicken to lock in the flavors. Heat some oil in a skillet over medium-high heat and add the chicken. Sear for 2 minutes on one side, then flip and sear for another 2 minutes.

Once the chicken is nicely browned, remove it from the skillet and place it on top of the seasoned potatoes in the slow cooker.

Next up, let’s create that delicious garlic butter creamy sauce. In the same skillet, melt some butter over medium heat, then add diced onions and sauté for about a minute.

After the onions, toss in minced garlic and cook for about 30 seconds until fragrant. Then, add all-purpose flour and cook it for a minute to eliminate the raw flour taste.

Now, we’ll mix in a combination of heavy cream and milk, along with Parmesan cheese and chicken bouillon cubes. Stir everything together well and let the sauce cook for about a minute to thicken.

Once the sauce is ready, pour it over the chicken and potatoes in the slow cooker.

Cover the slow cooker and let it work its magic for 4 hours. After cooking, you might see some oil on the surface; simply skim off the excess with a spoon.

Let the dish sit for about 10 minutes before serving, as this allows the sauce to thicken even more. Garnish with fresh parsley for a pop of color.

Garnishing with fresh parsley

The chicken will be incredibly tender and flavorful. I recommend breaking it apart so it can soak up even more of that delicious sauce.
