Breakfast Sandwich | Bacon Egg & Cheese Sandwich

This delicious bacon, egg, and cheese sandwich is the perfect way to start your day. Crispy bacon, a perfectly cooked egg, melted cheese, and a chipotle mayo sauce all come together on toasted bread for a satisfying breakfast.
Ingredients
For the Chipotle Mayo:
- ⅓ cup Mayonnaise
- 2-3 tablespoons Mexican Crema
- Chipotle Pepper in Adobo Sauce (to taste)
For the Sandwich:
- 4-5 slices Thick-Cut Bacon
- 2 Large Eggs
- 2 slices Processed American Cheese (or cheese of choice)
- 2 slices Bread (of choice)
- Salted Butter
- Bacon Fat (reserved from cooking bacon)

Step 1: Cook the Bacon
Place bacon slices in a cold cast iron skillet.

Turn heat to medium and cook until crispy.

Step 2: Make the Chipotle Mayo
Combine mayonnaise, Mexican crema, and chipotle peppers in adobo sauce in a food processor.

Blend until smooth and creamy.

Step 3: Toast the Bread
Preheat a griddle to medium heat. Add reserved bacon fat to the griddle.

Place bread slices on the griddle and toast until golden brown, using the bacon fat.

Step 4: Cook the Egg
Melt butter in a small pan over medium heat.

Crack egg into the melted butter and cook to desired doneness (over medium recommended).

Place a slice of cheese on top of the egg while it’s still in the pan to melt. Turn off the heat. The residual heat will melt the cheese.

Step 5: Assemble the Sandwich
Spread chipotle mayo on both slices of toasted bread.

Top with the cooked egg and cheese. Place cooked bacon on top.

Cover with the other slice of bread and serve.
