Best Breakfast Casserole | Easy Breakfast Casserole with Sausage, Sweet Potato, and More!

This loaded breakfast casserole is filled with eggs, sweet potato, crispy bacon, breakfast sausage, green bell pepper, onion, garlic, and the perfect amount of seasoning.
It’s a delicious make-ahead dish ideal for weekend breakfasts, meal prep, and special occasions.
Ingredients
- 8 ounces bacon
- 1 pound sweet potato, peeled, sliced, and diced into 1/2-inch cubes
- Olive oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/4 teaspoon cumin
- Salt and pepper
- 1 green bell pepper, deseeded, sliced, and diced
- 1/2 medium to large onion, sliced and diced
- 1 pound breakfast sausage (sweet or spicy)
- 2 garlic cloves, minced
- 12 large eggs
- 1/3 cup milk (dairy or dairy-free)
- Cheese (optional)
- Sliced green onion (optional, for garnish)

Step 1: Preheat Oven and Prepare Bacon and Sweet Potato
Preheat oven to 400 degrees Fahrenheit. Place bacon in a single layer on a baking sheet.

Place diced sweet potato on another baking sheet.

Step 2: Season and Roast Sweet Potato
Drizzle sweet potato with olive oil, garlic powder, paprika, cumin, salt, and pepper. Toss to coat. Spread in a single layer on the baking sheet.

Place both bacon and sweet potato in the oven. Bacon cooks for about 18-20 minutes, sweet potato for about 35 minutes.

Step 3: Prepare Bell Pepper and Onion
While bacon and sweet potato are cooking, dice the bell pepper and onion.

Step 4: Cook Sausage and Sauté Vegetables
Remove bacon from oven when crispy. Toss sweet potato and continue roasting for 15 more minutes. Cook breakfast sausage in a pan over medium-high heat until browned. Remove sausage to a 9×13″ casserole dish and drain excess grease.

Sauté bell pepper and onion in remaining grease until softened. Add minced garlic and cook for another minute. Transfer vegetables to the casserole dish.

Step 5: Assemble Casserole
Remove sweet potato from oven and add to the casserole dish. Crumble bacon and add to the dish, reserving a few pieces for topping. Season with additional salt and pepper if desired.

Whisk eggs and milk together in a bowl. Pour egg mixture over the ingredients in the casserole dish. Top with reserved bacon pieces and cheese (optional).

Step 6: Bake and Serve
Bake in a 400-degree Fahrenheit oven for 25-30 minutes, or until the sides are golden and the center is set.

Garnish with sliced green onion (optional) and slice into 12 portions.

Place leftover portions in a glass storage container with parchment paper between slices. Freeze for up to several months.
